Sweet Potatoes

Ingredients:

4 sweet potatoes

2 tablespoons olive oil

salt and pepper

toppings of your choice

Directions:

Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil or parchment paper and lightly coat it with cooking spray.

Thoroughly wash and dry sweet potatoes. Use a knife to make about eight crosswise slashes up and down each potato.

Rub potato skins with olive oil and sprinkle with salt and pepper. Place on the prepared baking sheet.

Bake in the preheated oven for 30 minutes. Rotate the baking sheet 180 degrees and continue baking until a fork or knife is easily inserted into the centers of the potatoes, 15 to 30 minutes more.

Remove from the oven and allow potatoes to cool for 5 minutes. Cut and top with butter.
