Spicy Sausage Mushroom Rice Skillet

Ingredients:

2 hot Italian sausages (sliced)

1 cup uncooked rice (white or jasmine works well)

1–1½ cups mushrooms (sliced)

2¼ cups water or broth (chicken or veg)

Olive oil

Salt, pepper

Spices you could use: smoked paprika, thyme, crushed red pepper, fennel, oregano, basil, onion powder, black pepper

Directions:

Sauté sausage in a wide skillet over medium-high heat with a drizzle of olive oil until browned .

Add mushrooms and cook until softened and golden. No need to remove sausage.

Add spices and stir.

Add rice and water or broth and bring to boil, reduce heat, cover, and simmer gently for 15–18 min, until liquid is absorbed.

Let Rest for 5 minutes

Fluff with a fork, adjust salt, and serve hot.
